EASY CHICKEN PARMESAN

I prefer to make this recipe for chicken parmesan, but this one is the recipe I learned on. It is very simple and quick.

1 package chicken tenders
Ritz crackers, crumbled
2 eggs
1/2 cup oil (for frying--use whatever you like)
Mozzarella cheese, shredded

Prepare two shallow dishes (such as pie plates or wide bowls): one with the crumbled crackers and the other with the eggs. Whisk the eggs together lightly. Dip thawed tenders into egg mixture until fully covered, then smother with crumbled crackers. 

In a 12-inch skillet, heat olive, canola, or peanut oil over medium-high heat until shimmering but not smoking. Fry the breaded tenders for 2-3 minutes per side until golden brown all over. 

Put cooked tenders in a baking dish and cover with however much marinara sauce you want and then sprinkle with mozzarella cheese. Put under broiler and cook until cheese has melted and is spotty brown. Serve immediately.
