BAKED BBQ CHICKEN

I remember my mom (a busy working lady) making this fairly regularly. I loved it. She always served it with baked potatoes (which can bake at the same time the chicken is in the oven) and a salad.

4 chicken quarters (drumstick with thigh attached), or 8 bone-in skin-on drumsticks or thighs
Salt and pepper
Favorite BBQ sauce

Put chicken parts in a 9x13 pan, season with salt and pepper, and cover with favorite BBQ sauce. Bake at 350 degrees for 45-50 minutes.

Optional: Put baked chicken on a broiler-safe pan, baste with more BBQ sauce, and let sit under the broiler for 10 minutes (on the middle rack of your oven) for a more caramelized, crispy skin.
