These are our two current favorite chicken marinades. I have used them both anywhere from 4-24 hours in advance of cooking. I always use boneless skinless chicken thighs but they would be good for other cuts as well, and we prefer the chicken to be grilled. Both of these make enough marinade for about 3 pounds of chicken.
DIRECTIONS FOR BOTH:
Trim some of the excess fat from the chicken thighs.
Add all the marinade ingredients to a bowl, whisk together until combined, add the chicken, and mix around with your hands until all the chicken is covered evenly. Cover and refrigerate until ready to grill.
MARINADE #1
1 cup olive oil
1/4 cup brown sugar
6 Tb. soy sauce
1 Tb. lemon juice
2 Tb. fresh parsley, chopped
2 Tb. fresh thyme, chopped
2 tsp. salt
1 tsp. pepper
4 cloves minced garlic
MARINADE #2 (from Our Best Bites)
3 Tb. olive or avocado oil
1 1/2 tsp. kosher salt
3/4 tsp. pepper
1 1/2 tsp. smoked paprika
1 Tb. onion powder
1 Tb. garlic powder
1 Tb. Worcestershire sauce
1 Tb. soy sauce
1 Tb. Dijon mustard
