CROCKPOT NO-FUSS BROWN RICE

Cooking brown rice takes a long time on the stovetop and doesn't always turn out just right. Here is a crockpot version that works well. If you like brown rice but don't have two hours to wait for it, just cook it a day or two ahead of time and store it in the refrigerator for later use. serves 6

Vegetable oil spray
2 cups long grain brown rice
1 Tb. unsalted butter or vegetable oil
1/2 tsp. salt
3 cups boiling water

Coat slow cooker with vegetable oil spray. Add rice, butter, and salt to prepared slow cooker, then stir in boiling water. Cover and cook until rice is tender, about 2 hours on high.

Fluff rice with fork and season with salt and pepper to taste. Drape towel over top of slow cooker, cover with lid, and let sit for 5 minutes before serving. (This dish does not hold well on warm setting.)
