CHICKEN AND WILD RICE SOUP

Quick and easy soup that feeds a crowd.

serves 8

½ cup butter
½ cup flour
1 tsp. salt
½ tsp. poultry seasoning
⅛ tsp. pepper
1 box Uncle Ben’s Wild Rice (or ¾ cup wild rice)
2 cups water
3 (14.5 oz) cans chicken broth
½ cup green onions or 2 Tb. dried onions
2 cups half-and-half
1 ½ cups cooked shredded chicken

Melt the butter in large pot over medium-high heat and add the flour, salt, poultry seasoning, and pepper. Cook for 1-2 minutes, stirring occasionally, then add water, chicken broth, onions, and rice and cook until rice is done.  Add half-and-half and chicken and cook until chicken is heated through.
