LEMON HONEY MUSTARD MARINADE

This is good served as a grilled chicken sandwich or on its own as a main dish accompanied by buttered egg noodles and a vegetable.

1/2 cup extra-virgin olive oil
2 T. honey
2 T. dijon mustard
Juice of 1 1/2 lemons
1 tsp. kosher salt (or 1/2 tsp. table salt)
1/4 tsp. ground black pepper

Mix all together in a ziploc bag and let chicken marinade for at least an hour or overnight.

Heat grill to medium. Remove chicken from marinade; place on hot grill. Discard marinade. Cook, turning as needed to prevent burning until cooked through, about 10 minutes.
