ALFREDO

This recipe does not reheat well; you will want to eat it all in one sitting.

serves 4

1 cup heavy cream
1/4 cup butter
1/2 cup Parmesan cheese, freshly grated
Pinch of nutmeg, freshly grated is best
Salt and pepper to taste
Fresh or dried parsley to taste (optional)

Heat cream in a medium saucepan but do not boil. Add butter and stir until melted. Sprinkle the Parmesan all over and stir gently as it melts. Add salt and pepper to taste. Put cooked pasta of choice into a large serving bowl and pour the alfredo over it. Mix well until all noodles are evenly coated. Serve immediately.
